If you describe pancakes, the first word that comes to mind is probably “fluffy.” The pancakes found in a certain cafe called “Shitamachi no Tokeidai” in Kanazawa, Japan, though, might be better-described as pudding-like! They’re offering “yurete odoru pancakes” (swaying and dancing pancakes), and wow can they move!

You probably noticed that little gold leaf on the top, right? These pancakes can be found in Kanazawa, but that’s not what this beautiful area is known for. Kanazawa happens to be the major producer of gold leaf in Japan, with 99% of the country’s gold leaf coming from here!

The gold leaf is totally edible, too. You can find it in everything from moisturizer there to lollipops, and there’s no denying that the touch of gold looks beautiful against the matcha’s bold green~
