The title comes from “Una” meaning “unagi” (eel) and “Juu” meaning a square container for serving rice. Japanese people have loved eating eel ever since the Edo era and Unajuu has continued to rule as a super special treat that ordinary people rarely get their hands on.

Grilled over a fire and topped with a secret recipe soy sauce based dipping sauce the white meat is sweet and fragrant, and the light fat and white rice together in one bite are in perfect harmony. The slightly distinctive smell which reaches your nose is down to the uniquely Japanese spice “Sansho” pepper which has the ability to become the most prominent aspect of your entire meal.
