06 Yakitori
Chicken grilled on a skewer, served in bars all over Japan. It comes in two flavors, soy sauce and salt, Usually, you specify which kind you want when you order. There is a unique name for each part of chicken meat, and you can likely feel this deep cultural layer just by opening a menu. (It’s a good idea to ask others honestly when you don’t know what something is, like “What is bonjiri?”)
Yakitori is also available in cans at the supermarket, but when it comes to enjoying the grilled smell and taste, of course there’s nothing like the very rare occasion of sitting at the smoke counter and biting into a freshly grilled yakitori prepared by a grilling expert.
